COMFORT FOOD: CHICKEN ADOBO
I am a firm believer in eating delicious foods that are
also healthy for you.
Chicken Adobo is one of my favorite Filipino dishes–which also happens to be the national dish of the Philippines.
It has been my mission to learn to cook my family recipes in a modern yet healthy way. There are many ways of cooking this beautiful dish,and no one way is the same. It is my pleasure to share this recipe with you. This is a dish I grew up with and have come to deeply appreciate as I get older.
INGREDIENTS
2 lbs. Chicken drumsticks or thighs
¾ c Apple cider vinegar
⅓ c Coconut Aminos
⅔ c Water
10 Cloves garlic(crushed)
1 ½ t pink peppercorns
3 Bay leaves
1 ¼t Sea salt
2T Avocado oil
This dish traditionally includes black peppercorns and soy sauce. I have eliminated them because I am sensitive to both. This version is on the sweeter side, but still savory. Simple, but very good. Omit peppercorns and garlic if you have sensitivities to them. I’ve tried it without garlic and peppercorns and it is just as delightful. Serve with rice and/or veggies.
